6 ounces ground breakfast sausage

1 tablespoon butter

1 cup spinach

2 tablespoons guacamole

2 eggs  

salt & pepper to taste

 

Instructions:

Heat a skillet over medium heat. Using your hands, form ground sausage into two patties, about ½ an inch thick. Fry in heated skillet for 3-4 minutes then flip and allow to cook another 2-3 minutes until cooked through. Place on plate and set aside.

In same pan, melt ½ tablespoon butter and add spinach. Sauté until just wilted. Place on top of sausage patties.  

Add the remaining butter to the pan and melt. Fry eggs and season with salt and pepper, cook to desired doneness.

Place guacamole on top of sausage and spinach then top with fried eggs. Enjoy!
