Dig into our mouth-watering Bacon Cauliflower Keto Mac-N-Cheese. An easy recipe with delicious results!

4 strips bacon
4 cups water
1 head cauliflower
2 teaspoons kosher salt (divided)
2 cups shredded cheddar cheese
4 oz cream cheese
⅓ cup heavy cream
¼ teaspoon cayenne pepper
1 teaspoon paprika

Cook bacon for 6 minutes in a frying pan over medium-high heat. When crispy, remove bacon from pan, dab excess grease with a paper towel, then chop and set aside. Add water to a medium pot and bring to a boil. While water heats, chop cauliflower into small pieces. Add one teaspoon of salt and cauliflower to the boiling water, then cover and cook for 4 minutes. Drain and set aside.

Combine cream cheese, heavy cream, cayenne, paprika and the remaining teaspoon of salt. Stir to combine, then cook for 4 minutes until smooth and thick. Fold in cauliflower, then add cheddar cheese. Stir until cheese melts, then add bacon.
