1 lb flank steak, sliced
2 teaspoons lime juice
2 teaspoons coconut aminos
2 tablespoons avocado or coconut oil, divided
3 carrots, peeled and sliced
1 head small cabbage, sliced
3 fresh scallions, minced
1 tablespoon ginger, grated
4 cloves garlic, minced
Add flank steak, coconut aminos and lime juice to a bowl. Toss to combine and let marinate for 10 minutes. Heat one tablespoon of oil over medium-high heat. Sear half the steak on each side, then place seared steak in clean bowl. Repeat with remaining steak, draining excess liquid as needed.
Heat the remaining 1 tablespoon of oil in the pan. Sauté carrots until soft, then add cabbage and quickly toss them together. Move cabbage and carrots out the perimeter of the pan before adding scallions, ginger, and garlic to the center. Stir until fragrant, then mix everything together and add the meat. Pour in coconut aminos and lime juice. Stir gently, then remove from heat and pour into bowls. Garnish with remaining scallions and cabbage.
