3/4 cup shredded cheddar cheese
1/4 cup shredded parmesan cheese
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
Cayenne pepper (for taste)
Preheat oven to 400 degrees. Line baking sheet with a silicone baking mat or coat liberally with nonstick spray. Toss cheddar, parmesan, chili powder, cumin and cayenne together in a bowl. Spoon lumps of the cheese mixture onto baking sheet, leaving 1 inch between. Gently pat each lump to flatten. Bake until cheese is golden brown and bubbly. Let cool completely before eating.
