2 medium bell peppers
4 ounces ground beef
1 cup shredded Mexican blend cheese
1/4 cup guacamole
1/4 cup pico de gallo
2 tablespoons sour cream
1 tablespoon coconut oil
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
Kosher salt (for taste)
Cut peppers in half, removing seeds and stem. Place in microwave safe bowl, add a splash of water and salt for taste. Cover and microwave to soften peppers. Let cool slightly, then place on a foil-lined baking sheet open-faced side up. Preheat broiler.
Heat oil in a large nonstick skillet over medium-high heat. Add chili powder and cumin, stirring until fragrant and toasted. Add ground beef and salt (to taste). Brown the meat and break into small pieces, mixing in seasonings while cooking. Spoon beef mixture into each pepper, then sprinkle with cheese.
Place baking sheet in the oven and broil until cheese is melted. Top and serve with guacamole, pico de gallo and sour cream.
